Poetic Soul Though I am already pretty much domesticated, one thing I am not really good at besides sewing is baking. And since I also got diagnosed with having Gluten sensitivity on top of all my other buffet of medical conditions, I had to let go of my sweet tooth for any baked goods, such as chocolate cake.
It's been a struggle for me doing the trial and error, of not knowing which food to stay away from as not to get sick from ingesting even just a little portion of any gluten laced meal, desserts, cakes and pastries.--[*as they say, sandaliang sarap, pang-matagalan naman na hirap sa chaney-ney ko! *ARAY KO PO*]...with matching background music playing: I "GUT "a feeling, that tonight's gonna be NOT a good night!--sung by the "Black Eyed Peace" knock-off group...haha!--walang CD na ganyan! *LOL*
Anyway, there's also not much gluten/wheat free-baked goods available out there. No local bakeshop offer gluten-free cakes, so for the first time, I did not have a cake for my last year's birthday!--[*sad face* ]--pero balloon meron! hehe!
There are some groceries that have gluten/wheat-free baked items, but besides being pricey, the consistency is not good because it has been already frozen. Because of this, I had almost given up of ever having a chocolate cake again...until one day, as I was strolling the aisle, lo and behold, there it was...a gluten-free chocolate cake that looks so inviting, except it's from a mix carton...oh no! I have to bake it then! ooohhh boy, but I don't do baking!
But then again, as I was standing there thinking to myself, just like the saying "no guts, no glory" equates to "no bake, no cake"...haha!--so determined, I reached for the carton, bought the other necessary ingredients, and did a leap of faith to try to bake for the first time!
hahaha! *taas-kamay*--It was a success! I did well for a first timer wanna-be baker! The cake turned out to be so good, and it's not going to make me sick! *YEY*
See the finished product photo below; but please hold your orders for now hehe! ;p

For you, My Dear Heart of Mine--
Most folks choose to spend money on their honey
Expensive dinners, on things lacy and flowery,
For Valentine this year, I chose to bake a cake
Dark chocolate, sweet and Oh so chewy,
With colored M & M’s, red, green and orangey.
Sprinkled with lots of LOVE from my SkippyHeart to you, my dear cupCAKE!
Have a wonderful Heart’s Day to y’all ~ sh
